Dahi Vada is a snack item which is mostly famous in north india. But in todays time it is being serve in the whole country.
Dahi Vada is famous with different name in different states like Davi Vade in Marathi, Dahi Vada in Hindi, Dahi Bhalla in Punjabi, Thayir Vadai in Tamil, Thairu Vada in Malyalam, Doi Bora in Bengali and many else.....
But before I start my recipe I would like to share some Health Benefits of our recipe.....
Dahi Vada is a good option to have as a snacks as it is easy digest.
Vada is made by using fermentation method, it is rich in carbohydrates, protein,fibre and probiotics.
Curd also provide probiotics which are essential for gut health, it is reach in protein and calcium.

INGREDIENTS
For Vada
- Urad dal : 1 cup
- Green Chilli : 1 chopped
- Ginger :1/2 inch
- Rock Salt : 2/3 tsp
For Curd
- Curd : 2 cup
- Chaat Masala : 1 tsp
- Red Chilli Powder :1/2 tsp
- Roasted Cummin Powder : 1 tsp
- Black Salt as required
For Tamarind Chutney
- Seedless Tamarind : 1/2 cup
- Cummin Seed :1/2 tsp
- Red Chilli Powder :1/4 tsp
- Jaggery : 7-8 tbsp
- Oil :1 tsp
- Tej Patta : 1 pc
- Rock Salt as required
For Green Chutney
- Coriander Leaves : 2 cup
- Garlic :2 glove
- Green Chilli : 2
- Salt as required
- Water as required
- Chaat Masala as required
- Coriarnder Leaves as required
For Sweet Chutney
- Soak tamarind in water for 4-5 hrs.
- Now squeeze the tamarind out and keep the pulp aside.
- Take a pan heat it up and add oil in it.
- Then add cummin seed, let them crackle in low flame.
- Now add Red chilli powder, then the tamarind pulp.Cook for 2-3 min.
- Add jaggery and salt to the mixture and cook it for 4-5 min more.
- Let the mixture got thicken, after that remove it from flame.
- Keep it aside for cooling.
For Green Chutney
- Grind all ingredient mentioned in green chutney list,to a smooth paste.
- Then keep it aside.
Batter For Dahi Vada
- First rinse urad dal/ lentils for 3-4 times in water.
- Soak Urad dal in water for 4-5 hrs or for overnight.
- Drain water and shift it to a grinder.
- Add ginger, green chilli and salt to the grinder with Urad dal.
- Grind it to a smooth batter use water to make it smooth.
- Use 3 spoon water for making the batter smooth.
- Now take the batter in a bowl and whisk it for a minute, this makes the batter fluffy.
- Heat a pan, add oil for frying vada.
- When oil becomes medium hot ,add a spoonful of batter in it.
- Cook them in low flame, so it can be cooked from inside.
- When its colour changes to golden brown, set it aside on a tissue paper.
- In a bowl take water, add fried vada in it and soak them for 20 min.
- Then take out the vada and squeeze the water out ,then flatten them with your palm.
- Place vada in a bowl.
- Whisk curd till it become smooth, then add this to the vada.
- Top green chutney and sweet chutney.
- Sprinkle roasted cummin powder, red chilli powder and black salt.
- Can garnish with coriander leaves.
- Its ready to serve now.
