SABUDANE KI KHICHDI

                    Sabudana is a dish, which is found in every Indian house. While doing fasting sabudana are used mainly as fast food.One of the main reason why you should eat sabudana is because they are rich in energy.

INGREDIENT

  • Sabudana                    : 1 cup
  • Peanut( mungphali) :1/2 cup
  • Potato                          : 1 chopped
  • Chana dal                    :2 tbsp
  • Cumin seed (jeera):2 tsp
  • Rai/ Sarso                   :2 tsp
  • Kari patta                    : 1/2 cup
  • Green Chilli                : 2 chopped
  • Oil/Ghee                     : 2 tbsp
  • Salt as required.

For Garnishing
  • Coriander leaves as needed
  • Lemon juice as needed


METHOD

  • Take 1 cup of sabudana in a bowl and clean it properly.
  • Soak them in 3/4th of water, don't put excess water.
  • Soak them for 4-5 hrs overnight.
  • When properly soaked, they absorb entire water and almost double in size.
  • To check , press sabudana pearl in between your thumb and forefinger. When soaked properly it will be soft and mashed easily.If it is still hard,it has to soak for a little longer.
  • When soaked properly then there will be no water left but still drain them completely.
  • Dry roast peanuts until its crunchy , then shift it to a bowl/plate.
  • Add oil/ghee in the same pan, add cumin seed(jeera).
  • When it crackle add rai/sarso, chana dal and kari leaves into it.
  • Add 2 chopped green chilli, saute for 1-2 min.
  • Add boiled potatoes and saute for 2 min.
  • Now sprinkle salt as required.
  • Lower the flame completely and then add drained sabudana to it.
  • Add peanuts to sabudana and mix everything well.
  • Saute them for 2-3 min in high flame, then sabudana would appear transparent.
  • Now remove the mixture to a bowl to avoid stickiness.
  • Add Coriander leave and lemon juice as needed.
  • Now its ready to serve.

Tips
  • Don't soak sabudana in over water, it may lead to stickiness.
